Hello & Happy Thursday!
On the menu for Monday, May 18th is KAPUSTA SOUP & CRUSTY BREAD ROLLS. Kapusta is a shared culinary tradition across Eastern Europe, deeply rooted in Slovak, Polish, and Ukrainian cuisines, featuring sauerkraut, cabbage and pork ribs. This recipe was passed down by my father-in-law and has quickly become my daughter’s absolute favourite soup.
I am thrilled to highlight a local collaboration in this week’s newsletter! I’ve teamed up with Narrow Gate Foods to feature their ‘Plain Jane’ sauerkraut in this recipe. Everything they make is handcrafted locally here in Thunder Bay in small batches with love. Beyond sauerkraut, they offer a great line of gut-friendly goodies like Kimchi and Kombucha. Support local and give them a follow on the Narrow Gate Foods Facebook Page!
How It’s Crafted:
We start by simmering pork spare ribs until perfectly tender, then add tangy sauerkraut, fresh cabbage, onions, garlic, and spices, letting it bubble away to build deep flavours. Next, we add hearty barley for the perfect texture, letting it soften and thicken the broth. Finally, we add smoked sausage and finish it with a touch of tomato soup for depth, this is old fashioned comfort food at it’s finest!
Our crusty bread rolls are a comforting classic: Baked to a perfect, rustic crispness, this artisanal roll adds the ultimate texture and warmth to your Kapusta.
Sweet Treats:
KEY LIME is the newest addition to the Meringue line up this week. These are classic French style meringues, featuring a glossy shell that gives way to a delicate, slightly chewy centre. Always available are Peanut Butter, Chocolate Hazelnut and Mint Chocolate Chip to name a few.
